Basil, Goat’s Curd, and Pomegranate Salad

I wanted to lighten up this week. As the weather turned, I had a craving for a few carb-driven recipes in the last month. Undeniably, there shouldn’t be any guilt eating veggie meatballs with pasta, or healthy nachos, but we need to keep our ship on course. With this in mind, I always make a point to incorporate a salad or cooked vegetables at every meal. Even so, the world is our oyster, and we have to make decisions daily on what, or what not to eat. Speaking from experience, I had to turn it all around in my head. At the age of 18, I was 160 pounds, and the scale kept creeping upwards. It felt like everything I looked at packed on the pounds. What I came to realize is that it’s all about portion control. Oi, do not reach for a scale. I’m talking reality. All we have to do is chill out and get real with ourselves. The inconveninet, but perfectly acceptable truth is that chips, cake, ice cream, pizza, and soda are to be eaten on rare occasions. A few naughty and nice things, albeit ones that are natural, can be enjoyed without a heavy [...]

Marinated Tofu Salad

I have to make a confession. I didn’t want to cook today. No, really. It’s an absolutely beautiful summer day. So much so, that the sun and casual breeze is begging me like James Brown to come out and play. I want to do as little as humanly possible in the kitchen, then go out enjoy myself. This of course does not mean that we’re going to get slack and dine on a can of soup. That would be sacrilege. We have come too far, non? The only compromise we are making today is with time, not flavor.  Tofu. The food of the devil, right? O.k. Take a deep breath, let’s have a civilized chat about this. Stay with me on this line of thinking: Have you ever dated a man that had no finesse with a woman? Or, as a woman, have you ever talked a man to death (the only exception being his favorite sport and players. I know. Neither did I.)?  My own biased opinion: A woman is like a Ferrari. You just have to know how to drive her. Undeniably, tofu is not sexy, nor expensive, but if you treat it with the love and respect [...]

Supreme Taco Salad

This salad is a meal in itself. Supreme Taco Salad is light and refreshing, yet deceptively filling. The savory flavor is satisfying without the heaviness of meat. I have two options for you to prepare the nut meat. If you are new to raw foods, you might like to bake it for a more intense, meatier flavor. This is a great way to slowly transition into vegetarian meals.  The other option is to use a dehydrator, warming the nut meat until crispy. Something to think about: Eating raw or dehydrated foods retains 100% of the nutritional value, while cooking over 150° diminishes nutritional value of food by 50%. Whenever possible, try to eat all food in its raw and freshest state. For most meals, I enjoy a small portion of cooked food accompanied by a large green salad.  Remember, I am like most of you out there. As a child I grew up eating Captain Crunch cereal for breakfast, Butterfinger candy bars, Lemon Heads, and Watermelon flavored Now Or Laters. I was a junk food junky of the highest order. If I can happily make the change, so can you!  Supreme Taco Salad 1/2 head of romaine lettuce chopped Taco [...]

Kalelujah Salad with Heirloom Tomatoes

Today I have been busy harvesting and distributing vegetables and flowers to Jake’s preschool, neighbors, friends, and our very own lucky kitchen (word is bond). Today, I picked heirloom tomatoes, artichokes, fennel, zucchini, arugula (rocket for my UK crew), kale, and peppers. Summer is in full swing. I love Farmer’s Market, but this is the bomb, for real (doe). Kale Salad. Yup yup. Word to your Mother Earth. Apologies, I’m feeling a lil’ old school hip hop today. I figure I’ll roll with it until I get it out of my system. I promise I won’t get into talking about my spinning rims (I drive a VW, worry not). I could artlessly dole out another salad recipe (is this art? erm, worried), and bail on you, but I figure you’re here because flipping through a book is a lot less fun. I’ve obviously gotten a bit too much sun today…. So Kale Salad. Let’s have another go, shall we? I call it Kalelujah (pronounced kah leh loo yah) Salad because when I finally plucked up the courage to try a raw kale salad, I immediately had that “Halelujah, praise be to the Green Gods” moment. Why had I waited so long? Why [...]

Asian Quinoa Salad

I was lucky to discover this salad at the Harvest Ranch Market on a recent trip to San Francisco. Oh, how I love this city. Apart from it being one of the most beautiful cities in the world (even when it rains…yes), everyone is so grounded and laid back, and their health food stores rock. Did I say that they rock? Ohh ho ho yes! I positively glow with excitement as I enter a cool granola health food store that is independently owned. If you are in San Francisco, do go to Rainbow Grocery as well. As well as being a superb market, it’s wonderful for people watching. Don’t get me wrong, I lurve (oh there I go again) Whole Foods, but there ain’t nothin’ like a quirky, down to earth vibe to get my heart racing. It appeals to the inner hippie living inside of me. Oh, I think I’m going to do a Dead Head twirl right now…… I’m back. So this dapper salad was nestling in the bar at Harvest Ranch Market. It looked so light and delicious that I had to give it a try. Ever had one of those rare experiences when you strike gold [...]

Tabouli Salad

There I was over the holiday season thinking I was such a baddass, eating whatever I laid my eyes on. I could work it off, right? A bit of stuffing here, parsnip mash there, roast potatoes, gravy, and pumpkin pie (yes, I ate my veggies: caramelized brussel sprouts and carrots sauteed in thyme). Did I really consume all of those carbs in one sitting?. The final nails in the coffin: Two glasses of wine and a few Christmas cookies. But of course. The next day I attempted to slip into my trusty Topshop jeans, and excuse me, what was that extra bit of flesh jiggling at my waist? Oh no I didn’t!! It’s hard to admit, but my age has finally caught up with me.  The first 2 years of my son’s life were so easy. All I had to do to stay fit was breast feed and chase after him. For the first time in my life I was 123 pounds. Jake will be three this year, and with all of his physical independence, I have found myself chilling out more often then not. Jake will be going to preschool in a few weeks, and gulp, I might just be in [...]
