
Vegetable Udon Soup
We’ve all grown up with Top Ramen and Cup O’ Noodles, but at some point, you have to say, enough is enough. Those dainty silver “flavor” packets laced with MSG are scarier than Mel B, who stars in her aptly titled reality TV show, “It’s A Scary World.” Yes, quite. This one’s for the noodle lovers. It’s a soup that has all of my favorite elements: tasty, filling, and deceptively good for you. This is by no means a strict recipe. Feel free to play around with different vegetables. It’s hard to go wrong on this one. And no one gets left behind: It’s a cinch to prepare. Just boil up some udon noodles (udon=hip btw) for a few minutes, and in a separate pot, simmer some veggies. Plonk the noodles and soup into bowls, and by some freak of nature, it looks cool. Even Toby fell for it by saying, “Oh, that’s looks nice.” In fact, I did a double-take. Over the last few days, I have been thinking about what to make for you (formerly known as procrastination). While snooping around the back alleys of my shelves, I had an “Ah Ha” moment, as Oprah would say. While discovering a bag of Indian yellow split peas tucked away in the cupboard behind various food stuffs may not rank in your top ten “Ah Ha” moments, I’ll take what the universe has offered me, be grateful, and run with it. I make monthly visits to my favorite Indian grocery, The Samosa House in Culver City to load up on chutneys, spices, 5 pound bags of basmati rice, chapatis, naan breads, and English biscuits and teas (my husband Toby cannot live without McVities Chocolate Covered Digestive Biscuits with a cup of Earl Grey). Somehow, with all of my stash of goodies, I got sidetracked and forgot to make Dal for the family. I will now seize the day and make a delicious vegan and ayurvedic soup that will cleanse your body, heart, and soul.
